Sheri R. Family’s Rhubarb Recipe
Ingredients:
3-4 Lbs. Rhubarb, 1 Lb. Fresh Strawberries
1 1/2 Cps. Sugar
1 Tbs. Lemon Juice; 1 Tbs. Cinnamon
Preparation method:
Clean any bruises off of rhubarb stalks and cut rhubarb into 1-2" chunks. Put rhubarb chunks in large pot with 1-2 cups of water (enough water to cover the bottom of the pot plus a little extra, but do not submerge the rhubarb in water, because the rhubarb itself becomes very watery as it cooks). Bring to a gentle boil for a few minutes. When rhubarb is saucy, use a potato masher to get out the lumps. When it's all melted, turn the heat down, and add the other ingredients. Allow to cook on low heat for approximately 15 minutes in order to fully dissolve the sugar. Adjust the flavoring to taste according to your preference for more sweetness or more tartness. Refrigerate, and serve chilled over pound cake or by itself in a bowl (as you would applesauce). Enjoy!
